A great variety this is a dependable, larger fruited than traditional purple eggplant. Black Beauty produces very attractive 1-3 pound fruit that keeps well and has excellent flavor. This variety has been a popular favorite for 100 years. Start harvesting when the eggplants are 4-5 inches long. The skin should be shiny, dull skin is a sign that the eggplant is over-ripe.
Tip: Use a sharp knife and cut the eggplant from the plant, leaving at least 1 inch of stem attached to the fruit.
